Pork.
Our pigs are one of our specialties, they are heritage breeds, Tamworth and Berkshire or crosses known for their superior taste and ability to be raised on pasture. We have created a "farm partnership" with Tim Lippert in Berne, NY; he raises the little pigs for us until weaning (using our philosophy, pasture, and humane methods) and we bring them home to raise on pasture. They eat grain, grass, clovers, grubs, roots, moss, and acorns. They have a portable house to keep them shaded and dry, and they rotate through pastures and woodlands, where they help us clear out brush. As pigs ought to, they live with their noses in the soil and their tails wiggling in the air. We make sure they have shade or a wallow in the heat, and a place to get out of the mud in the cold. Their paddocks are big enough for them to forage, romp, squabble, snuggle, and play tag every evening at dusk.
Pork is available in whole or half animals, through the regular CSA and Buyer's Club CSA, and by the cut at the Amherst or Northampton Farmer’s Market.
