We do Wholesale only for half/whole animals and Restaurants; and we have only Pork, Veal, and Lamb available.
If you have not bought whole animals before, there are some terms you need to understand. Live weight is what the animal weighs while it is running around in the field. Hanging weight is what the animal weighs after the head, hide, blood, and innards have been removed. It is about 70% of live weight for pigs, and more like 60% for ruminants like beef, veal and lamb. We charge by hanging weight when we sell whole animals, because the third term, cut weight, varies considerably according to your choices. Cut weight is what you actually put in your freezer. It is between 65 -80% of hanging weight, and that spread is largely attributable to how you choose have it cut. But beyond that, how much you get back depends on whether you save bones and organs, feet and heads for stock, whether you order bone-in or boneless chops, or grind everything into sausage. It’s up to you. (Mostly. We regret that we cannot guarantee the slaughter house will follow your instructions exactly. But they’re usually pretty close for us.)
When you order an animal, we will ask you to fill out a cut sheet and get it to us, and we will deliver the animal and the cut sheet to the slaughterhouse. The cut sheet has options such as how thick do you want your steaks, how many per package, more chops or roasts or ground, which sausage spices, and that sort of thing. If you find it confusing, we’ll be happy to talk you through it.
When you are comparing prices, consider also that our prices include all slaughter and transport fees, which can add $175 or more to the total cost. You don’t have to worry about those; they are figured in. The only exception is for cured meat. Curing bacons and hams takes extra time and money. At our USDA-inspected slaughterhouse, that adds about $2 per pound. You may also get cuts you’d like cured back fresh as large slabs and either experiment with curing them yourself or take them to a neighborhood processor (here in Huntington, Moltenbrey’s Grocery will cure pork for $1 per pound, but it is not then legal for resale, so you’d have to do it; we can’t!)
